Los Xurros started with a wrong turn in Madrid. In 2017, Eric was backpacking through Europe and asked a few locals where to get breakfast. They pointed him to a churrería off the main drag. It was nine in the morning and the place was packed, eighty people deep, all of them eating churros. That stuck with him.
Somewhere in the same trip he got to talking with a retired churrero on the street, an older man who had spent his working life making them. When Eric decided he was actually going to do this, he went back to Madrid and bought the recipe from him. That recipe is what we still make today, by hand, fresh in front of you.
The dough is the original Spanish version, which means no eggs and no dairy, not because we set out to make a vegan churro but because that's simply how it was done. The one thing we changed was the finish. In Spain they come out plain and you dip them in chocolate. Ours get cinnamon and sugar, because that's how Los Angeles eats a churro.
