Every churro we fry is vegan. The dough is the original Madrid recipe, and it never had eggs, dairy or lard in it. Nothing was swapped out to get there. Fried to order at National & Sawtelle in West Los Angeles.
The recipe came from Madrid. Eric bought it from a retired churrero, an older man who had spent his working life making them, and it is the recipe we still make by hand today. The traditional Spanish dough has no eggs, no dairy, and no lard. We didn't set out to make a vegan churro. That's simply how it was done.
So vegan isn't an option on our menu. It's the only churro we make. You don't have to ask for it, and there's no separate batch.
It's why ours come out crispy on the outside and soft in the middle. We have a saying at the stand: “Eggs and lard makes churros hard.” The one thing we changed from Spain is the finish. There they come out plain and you dip them in chocolate. Ours get cinnamon and sugar, because that's how Los Angeles eats a churro. You can also have them plain or dusted in powdered sugar.
